Chorizo Pilaf is a no-fuss, easy to make main meal that is perfect for mid-week dinners. Chorizo sausages are sliced and fried, then combined with onion, garlic, red chilli, basmati rice, spices and chicken stock. Simmered until the rice is fluffy, this flavourful dish is as delicious as it is simple to put together – give it a go!

INGREDIENTS IN THIS DISH:

5 Chorizo Sausages (sliced, about 400g total)
Olive Oil
2 Brown Onions (peeled and chopped)
2 Cloves of Garlic (crushed)
1 Red Chilli (deseeded and chopped)
2 Teaspoons of Paprika
1 Teaspoon of Ground Cumin
2 Cups of Basmati Rice
4 Cups of Chicken Stock (1 Litre)
1/2 Cup of Freshly Chopped Parsley
Salt and Pepper

Preparation Time: About 10 minutes
Cooking Time: About 20 minutes

SERVES 6

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    This sounds really good.  However I can't find chorizo in a form that can be sliced.  I've been to lots of grocery stores and even specialty stores looking for some but they are all like a ground meat even though they are packaged like a link.  I have to squeeze the packages to see if hard or soft.  And when I have used them like a ground meat they are so greasy.  But I'll keep looking and squeezing and will try this recipe even if I have to substitute smoked sausage.

    I just made it and it tastes fantastic!!! I added half a bag of frozen mixed veggies instead of the red pepper and for the herbs I used mint, cilantro and a dash of lime at the end. DELISH!! THANK YOU CHEF!! i will make this again.

    Chorizo is a Spanish sausage, and, in Spanish the letter, "z," is pronounced like the English "th," as in "thing," or "think," (I mean, not as in "though").
    However, having said that, I would think that if you were to walk into a delicatessen and ask for "choritho," nobody would know what you were talking about, (unless they were Spanish, of course)!

    We can't find chorizo in sausage form, is it possible to make this in its ground state? Like if you cook it with the pilaf, or would there need to be a binding agent, like an egg? I've been really wanting to try this, but we've just had no luck finding the sausage.

    I had spoken to my mum abt this recipe last night. I wanted to make it for a really long time.. She surprised me by making it for the family for lunch today! Turned out amazing! So delicious! Everybody relished it in my family. I cudn't get chorizo, so added chicken sausages. Also, she added red n yellow peppers with the onions! So Yum! Thanks David!

    Just made this, my first YouTube recipe that I made. Taste great, think ill add peppers and shrimp next time. I cooked the rice for 22 mins instead of the 10 also.
