Chickpea Curry | One Pot Chef

Chickpea Curry is a wonderful vegetarian dish that can be served hot or cold, as a side dish or a main meal by itself. Chickpeas are combined with garlic, onion, tomato, herbs and spices and simmered until delicious and fragrant. Serve with rice or on it’s own – give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 x 400g Cans of Chickpeas (rinsed and drained)
1 Onion (finely chopped)
2 Cloves of Crushed Garlic
2 Large Tomatoes (chopped)
100g of Baby Spinach Leaves
1 1/2 Teaspoons of Ground Ginger
4 Teaspoons of Curry Powder
1 Teaspoon of Cumin
1 Teaspoon of Oregano
Salt and Pepper
1 Cup of Water

Preparation Time: About 10 minutes
Cooking Time: About 15 minutes

SERVES 4

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    The only thing that I didn't add when I prepared this dish was ginger, and when I made it I didn't like the taste. So when preparing this dish is ginger an essential seasoning?

    Hey, try to add tomato after your onion is golden and let it cook for 10 min then add everything else. it makes a big diffferent and the food taste gorgeous.

    Sounds good but can I ask why you drain the chick peas and then add water wouldn't it be just as good to add the entire contents of the chick pea can and no water?

    I am trying this tonight!  Looks healthy and delicious.  Please make more with black beans, pinto beans, etc.  Also I would like to see an easy recipe to make tamales (the difficult way is to grind the corn, use the corn husks to envelope the tamale, etc. you get the idea, the way my grandmother used to make them).  Thank you very much and God bless.

    I am a new subscriber to your channel and I have to say I absolutely love your recipes. I made this tonight, along with your butter chicken recipe, served the 2 over rice, and MY GOD IT WAS SO GOOD! THANK YOU SO MUCH! I love to try new things, and both are keepers. Oh I have to mention, I have kids and they can be picky and they both loved the food as well. THANK YOU AGAIN :)

    I usually use "Keen" brand curry powder – personally I think it's the best 😉
