Cheesy Bacon Hasselback Chicken | One Pot Chef

Cheesy Bacon Hasselback Chicken is a delicious twist on the classic chicken dinner. Chicken Breast Fillets are sliced along the back to create pockets. A rich filling of bacon, garlic, onion and cream cheese is spooned into the gaps. Topped with grated cheese and baked until the chicken is tender and juicy, this easy dish is very impressive and can be modified to suit a range of personal tastes – Try it today 🙂


4 Large Chicken Breast Fillets (skinless and boneless)
4 Slices of Middle Rasher Bacon (chopped into small pieces)
2 Spring Onions (trimmed and finely sliced)
1 Teaspoon of Minced Garlic
125g of Soft Spreadable Cream Cheese
1/2 Cup of Grated Cheese

Preparation Time: About 15 minutes
Cooking Time: About 20-25 minutes

    Came back to watch this again because I am trying it tonight! 🙂 Opted for a regular onion over the spring onion. Also just had a thought of adding black olives. Thankfully I have a grocery store pretty close by. 🙂 – Heidi

    Do you have American style bacon available there, or is the Canadian bacon all that’s available? In American we have access to both, “regular” bacon is my fav!
