2 eggs
2 egg whites

    You could also make traditional tortillas with masa harina (flour made of corn) and they're still gluten-free.

    Allison are these only good fresh or can you store leftovers in the fridge.  If you can will the consistency/texture of the tortillas change?

    REally wanna try this but allergic to eggs. Have you guys tried making these w/1 egg only? I've done the pizza crust w/one. My main problem seems to lie in not getting the cauliflower squeezed dry enough, but all those eggs worry me!! I'm even wondering about chia seeds as a possible replacement. Thanks for the informational demo.

    Wow, thank you! I love me some starchy foods, but have to limit it cz I had weight loss surgery. This looks awesome! 🙂
    Just one question: How well do they hold together? Do they fall apart easily, or do they have some "give" like tortillas?

    #1 tip to make it sticks tgt is to really squeeze the cauliflower until no excessed water left. (= I'm switching the eggs to grounded flaxseexds (vegan version). Thanks !!

    Good stuff! You can also steam the cauliflower using a rice cooker, instead of a microwave, then mash by hand in a bowl and then strain with a cheese cloth. No need for a microwave or food processor if you want to avoid using them.

    Yuk! Straining the cauliflower in a tea towel?? All those chemicals from your laundry detergent!?!! Get yourself some cheesecloth!
