Beth’s Strawberry Basil Panna Cotta Recipe

STRAWBERRY BASIL PANNA COTTA
Makes 4

INGREDIENTS:
¾ cup (180ml) milk
¾ cup (180ml) heavy cream
3 tbsp (38g) sugar
1 ½ tsp (7.5ml) unflavored powdered gelatin
1 ½ cup (225g) strawberries, chopped
1 tbsp (13g) sugar
3 tbsp (45ml) water

Garnish:
½ cup (75g) fresh strawberries, diced
2 tbsp (30ml) fresh basil, julienned

METHOD:
Add strawberries, sugar and water to a blender. Blend until pureed. Set aside.

Place milk, cream and sugar in a saucepan. Simmer until sugar dissolves. Remove from heat, allow to cool slightly. Add gelatin. Whisk to dissolve. Add strawberry puree. Whisk to combine.

Strain mixture through a fine mesh sieve, into a 4-cup Pyrex pitcher.

Pour mixture into 6 oz. glasses. Refrigerate at least 4 hours to chill and set.

Before serving, toss diced strawberries with basil. Top each panna cotta with 2 tbsp of the strawberry basil mixture and serve.

    So classy. Panna cotta is one of our favorite. I normally make the strawberry cream but this version is quicker and more elegant. Yum

    I'm going to make this for sure. I think they would be so cute in the small clear plastic wine cups you can get at the party supply place. And I'm going infuse the sugar with Basil. Thanks for the recipe!

    Yummy. I am going to make these but keto style by using all cream and monk fruit sugar. I can't have sugar or milk but I can have cream. I love having dinner parties and dessert is one thing that we have to have. It is definitely a treat for me. Beth thanks for keeping everything a breeze in the kitchen. Xx
