BETH’S CLASSIC PROFITEROLES RECIPE
Serves 4-6

Ingredients For Shells
½ cup of flour (60g)
¼ tsp of salt (6 g)
1 tbsp sugar (30g)
5 tbsp butter (75g)
½ cup of water (120 ml)
2 large eggs, lightly beaten

Chocolate Sauce:
12 oz bag of chocolate chips (340 g)
2/3 heavy cream (160 ml)
1 tbsp honey (15 ml)
1 tsp of vanilla (15 ml)

Filling:
Ice Cream of Choice

Topping:
Lightly toasted almonds

Method:
Preheat oven to 400F degrees (200C). Line a sheet pan with parchment paper and set aside.

Mix together the dry ingredients.

Place water and butter in a pan and bring to a boil. Remove from the heat and with a wooden spoon stir in your flour mixture, until it turns into a ball and pulls away from the sides. Allow to cool slightly and then quickly stir in the eggs, it will be sticky and paste like.

Transfer the dough into a pastry bag, fitted with a round tip. Pipe out 12-15 1 ½ inch rounds.

Bake 400 10 mins. Then reduce oven to 350 and bake for another 40 mins. Once golden brown and puffed, turn oven off, open door and allow to air out for 10 minutes.

To make the chocolate sauce melt chocolate chips and heavy cream in a sauce pan. Once melted add honey and vanilla.

To serve, slice puffs gently open ¾ of the way and fill with 1 small scoop of vanilla ice cream and top with chocolate sauce and toasted almonds.

    After u add the flour mixture to the butter and water mixture, do you turn the heat back on?

    Great recipe Beth! I will need a desert to prepare in advance for the party. Can I prepare the shells evening before? Too many things will be going on during party, so I need to be prepared at least something in advance. Any ideas what desert and main course to choose? Thanks ))

    I tied this recipe but I added personal adjustments instead of opening Half of the profiteroles I made a little hole and added my ice cream in. A piping bag and filled it but it still turned out great !!!

    My dough flattens in the oven. It didn't go fluffy as in the video. What went wrong? Almost give up.

    I made the dough mixture twice but for some reason the dough is a bit runny and so I can't put it in the piping bag. So instead I scooped the mixture out with a spoon but it then flattens out into a weird circle. What did I do wrong? +Entertaining With Beth

    I had a fresh profiterole for the first time when I was in a Quebec cafe and I fell in love with them! So I'll definitely give this a try. If I wanna use cream instead of ice cream for the filling, what kind of cream is usually in french profiteroles? And do you have a recipe for the cream? Thanks!

    OK a couple of thoughts. 1.) Did you use real butter? Unfort these won't work with margarine of butter substitute. 2.) It could be that you added the eggs too quickly? After you add the flour you need to keep stirring the mixture until it comes away from the sides. Then add the eggs 1 at a time, stirring well between additions. 3.) The butter could have been over boiled and separated? It just should come to a soft boil, then add the flour. It shouldn't be left to boil away. 🙂

    Hi Beth! I tried making these today and the flavour turned out well but they didn't rise. When they were in the oven, it looked like the little balls had butter constantly bubbling around them. Do you have any tips on what might have went wrong? Also could I check how long the butter should be on boil for before adding the flour mixture, and also if the batter should still be warm when you're piping it? Thanks in advance!

    Ha! Perfect! You can actually freeze them, they do quite well. Then re-heat in the oven for a few mins to thaw and crisp up 🙂 Enjoy!

    beth, i LOVE you! I was never really a baking person until i came across your channel. mine came out perfectly except that i had about 20 of them instead of 12! made sure to keep it in a ziploc bag for later tho 🙂
