Beth’s Foolproof Chocolate Chip Cookies

Makes 1 dozen large sized cookies

1 cup (240 g) of unsalted butter
¼ (50 g) cup white sugar
¾ (135) cup brown sugar
2 eggs
1 tbsp (7.5ml) vanilla
1 ¾ cup (210 g) flour
1 tsp (5 ml) salt
1 tsp (5 ml) baking soda
1 cup (150 g) milk chocolate covered raisins
1 cup (150 g) semi-sweet chocolate chips
1 cup (150 g) candied walnuts
1 cup (150 g) of toffee bits


Preheat oven to 350F (177C).

Beat butter and sugars on high for 5-7 mins until very light and fluffy.

Add eggs one at a time, beating well between additions. Add vanilla.

Combine flour, salt and baking soda in a bowl and whisk together. Slowly add flour mixture to butter mixture and beat until well incorporated.

Add raisins, chips and walnuts, mix just until combined.

Line a rimmed lined cookie sheet with parchment paper. Scoop out dough with an ice cream scoop. 5 to a tray.

Bake for 13 mins, until golden around the edges and centers look dry.

Let cool on tray on counter for 5 mins. They will set up and continue cooking on the hot tray.

Transfer to cooling rack to cool completely.

    hi beth i love your channel i tried naking the cookies and my cookie dough turned out in a more batter-like consitency do you habe any idea why this would have happened and also when i baked it it came out having a cakey texture and i followed you recipe exactly.

    Hey Beth I made this recipe yesterday and while the taste was really good the texture of the cookie came out more like a bread like texture instead of a cookie one. I'm not sure how to explain it but I'm wondering why that happened?

    Hey Beth! I have a question. Do you have to put in the raisins(don't like raisins), walnuts(allergic), and toffee bits(don't know what it is) to the mixture? Can I just add the chocolate chips? Just wondering oh and also I love your videos

    I like you recipes, but the only problem is that for some of them, you don't say the exact amount of ingredients! For example, I don't know, what you mean when you say "add some sugar"! how much sugar?

    i tried this recipe and followed all of the directions but cookies started to spread to thin and covered the entire cookie sheet i thought i may have needed to add a little more flour but still had the same results :(

    If a person wants a soft cookie, eat cake. Cookies should be of a texture that has crunch, melts in the mouth, yet does not break the teeth. It is difficult to get this type of cookie, but possible, I just want somebody to give me a recipe that is really a cookie and not a flat piece of cake.

    well I'll need to practice this I guess. I was working straight from the video and didn't add the egg until the very end ooops, and I didn't realise I didn't have vanilla extract so I used Almond, not the same. After reading the instructions I will try again.

    I tried these, they came out great! But next time I might add a little less flour and if you have a small oven then do one sheet at a time in the middle rack so they spread correctly. :)
