BETH’S DOUBLE CHOCOLATE CHUNK COOKIE RECIPE
Makes 1 Dozen Cookies (12 3-inch cookies)

INGREDIENTS:
½ cup (120 g) butter
4 ounces (113 g) bittersweet chocolate
1 ¼ cup (250 g) sugar
2 eggs
¾ tsp (3.75 ml) vanilla
1 cup (120 g) flour
2/3 cup (70 g) unsweetened cocoa powder
½ tsp (2.5 ml) baking soda
½ tsp (2.5 ml) salt
½ cup (75 g) chopped bittersweet chocolate
½ cup (75 g) dried cherries
½ cup (75 g) walnuts

METHOD:
Pre-Heat oven to 350F (175C)

Melt butter and 4 ounces (113 g) bittersweet chocolate in a large bowl in the microwave at :30 increments until melted. Stir to cool.

Add sugar, eggs and vanilla. Set aside.

In a smaller bowl whisk together flour, cocoa powder, baking soda and salt. Add dry ingredients to the chocolate mixer in thirds and stir to combine.

Add in chopped chocolate, cherries and walnuts. Stir to combine.

Scoop out batter with an ice cream scoop onto a baking sheet lined with parchment paper. Only place 6 cookies to a tray allowing room to spread.

Bake 350F 15-17 mins. Allow to cool slightly and then transfer to a cooling rack. Then devour.

    You're totally right, the dried cherries is so much better paired with chocolate than raisins..I will definitely be making those cookies and I will add hazelnuts and pecans instead of hazelnuts..(for some reason walnuts always has a bitter after taste even in cookies :(

    These are friggin delicious. They're like if a brownie, a cookie, and a dark-chocolate covered cherry fell in love and had a baby. It's just…wow. Thanks for this, Beth! I made them tonight, for a celebration dessert. 5 stars all around! One thing though, I had to cook them for slightly longer — let's remember, all ovens are different.

    Made these today for my connect group and everyone who tried them commented about how yummy they were!! The store I went to didn't have dried cherries so I used cranberries instead. My recommendation would be to use about 90g of cranberries if anyone can't find cherries.

    I made these last night – they are the perfect cookie! I couldn't find dried cherries in my supermarket so i had to leave them out. I did White chocolate chips, dark chocolate chips and macadamia nuts. AMAZING! Perfect chewy texture! Definitely a new go to recipe. So easy to make with no fancy equipment required! :)

    Hallo! Ich bin nicht deutsch aber ich spreche Deutsch. Backpulver auf Englisch heißt "baking powder" und Natron auf Englisch heißt "baking Soda".
    Natron kommt aus der Element Natrium und Natrium auf Englisch heißt "sodium" dass ist warum Natron ist baking Soda. Ich hoffe das ich es gut erklärt habe. Wenn ich ein Fehler habe, bitte sag es mir so. Viel Glück beim Backen!

    Dark chocolate and cherry is an unbeatable combo!

    I can attest to Beth's assertion that dried cherries are nothing like icky raisins. I still cry when I get tricked into eating an oatmeal raisin cookie because it looked like a choc-oat-chip cookie, only I cry on the inside now.

    Dried cherries are heavenly! Especially if you can find dried sour cherries, (I think they might be called tart cherries in parts of the US). Dried Balaton cherries are my favorite sour cherry.They're a true sour cherry from Hungary that are also grown in Michigan now. They're sublime!
