Very nice Larry! I sort of get why they are crispy after a simmer. Reminds me of a Good Eats episode where the wings were steamed before roasting, the purpose being to get rid of excess fat, thus reducing smoke when oven roasted. However, your method lets the fat get into the glazing sauce, which would surely = Good Eats!
If one were to finish them on the grill (or oven) would you still dust them?
You're off the legal hook for mentioning the well known (and trademarked) Boss and Sauce reference, simply because you gave credit where it's due. But you coulda been a tad more creative by legally "stealing" (i.e., "borrowing" without permission) a grammatical phrase in the (non-trademarked) style of one of Chef John's elucidations….such as "You Are the Bob Ross of Your Chicken Wing Sauce."
Merely an example, which I may trademark myself….so fair warning there, my friend ;)
