Asian Style Chicken Noodle Soup is a quick and simple meal that can be made in around 15 minutes. A light chicken soup flavoured with ginger, garlic and chilli is combined with Vermicelli rice noodles, corn, spinach and succulent chicken breast pieces. This soup is not only delicious, but very healthy – give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

2 Chicken Breast Fillets (thinly sliced)
1 Litre of Chicken Stock (4 Cups)
1 Cup of Water (250ml)
1 Teaspoon of Freshly Grated Ginger
1 Teaspoon of Minced Garlic
1 Red Chilli (seeds removed, sliced thinly)
3 Spring Onions (thinly sliced)
400g Can of Corn Kernels (drained)
250g of Vermicelli Rice Noodles (use 125g if you prefer more soup and less noodles)
80g of Baby Spinach Leaves (1-2 large handfuls)

Preparation Time: About 5 minutes
Cooking Time: About 20 minutes

SERVES 4 – 6

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    Ahh this looks awesome thank you so much for your awesome easy recipes and healthy too! Although instead of corn and spinach I'd use basil, bean sprouts, thin sliced carrots, some lemon juice, green onions, and maybe some celery or broccoli but I like the simple Vietnamese original pho vegtables

    Hello One Pot. Love this one! I'm an older guy (50+) who does manual labour and really needs a good meal when he comes home. I've used this recipe and a few of your others. Keep up the good work!

    i think you do not have to cook the rice noodle for that long

    As stated in the video, the noodles were in the only in the pot for a few minutes. How could they be over cooked?

    No, I used grated fresh ginger. You can use dried ginger if you prefer 😉

    I didn't think I would like this, but I was sick and needed a little pick me up…. And I loved it! I got a bit worried when the noodles soaked up all the liquid but never the less it tasted wonderful! I even like it better a day later 🙂
