Apricot Chicken Curry is a delicious main meal dish, perfect for any night of the week. Chicken Breast pieces are dredged in seasoned flour and browned until golden. Combined with a fruity apricot curry sauce and served on a bed of cous cous, this dish is suitable for the entire family – give it a go!

INGREDIENTS IN THIS DISH:

1kg of Chicken Breast Fillets (diced)
1 Cup of Plain Flour
Salt and Pepper
1 Tablespoon + 1 Teaspoon of Curry Powder
1 Brown Onion (diced)
2 Cloves of Garlic (crushed)
400ml Can of Apricot Nectar
1 Cup of Dried Apricots (diced)
Cous Cous (to serve)

Preparation Time: About 15 minutes
Cooking Time: About 40 minutes

SERVES 4 – 6

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

    I really don't want to use apricot in the recipes, can substitute  stuff like chicken stock?

    Dave, it came out great! I served it with a long grain wild rice. By the way I found the apricot nectar in the health food department of my local supermarket. Thanks for sharing!
