Mac and cheese is one of my favorite foods, and I really want to try this recipe. Unfortunately, I've been to Wal-Mart, Publix, Winn Dixie, and The Fresh Market but no one has Red Leicester cheese. Is there another kind of cheese that is similar to Red Leicester that I can use instead?

Awesome easy recipe. With this as a base, you can do so much more. You could add in a vegetable like peppers, carrots, peas, or broccoli. Also, you could add in a meat like chicken, beef, or my favorite bacon.

ok who knew! I tried this today for lunch, this was so good! I just used a cheap cheddar I had on hand 🙂 BUT you definitely need to keep your heat lower, and watch your milk and macaroni, almost burned my macaroni to the bottom of the pan

Okay – I never thought of cooking the pasta in milk. I have to try this now…. but I think I'll use Petit Basque cheese though, since I have some on hand.

So I made this tonight, and I must have done something wrong. It came out very thick and almost had a box mac and cheese powder feeling? Anyone got any ideas on what happened? I also used a extra sharp white cheddar.

I really didn't like the colour of that cheese 🙁 it reminds me of grated carrots which makes me ill… I use nutmeg in my cheese sauce, it's a real aphrodisiac haha …
